This salad is so easy to made. All you need is lettuce, mixed cabbage slaw, rotisserie chicken (I got mine from Whole Foods), roasted peanuts (optional), and Thai peanut sauce.
This Thai peanut sauce is also great for stir fried, or dipping sauce. Definitely a great addition in my pantry!

I'm so happy we found V-town Provision while shopping at the farmer’s market in the city of Vallejo.
Their menu is unique and delicious with lots of vegan choices. They offer over 20 local beers, wines and kombucha on tap, as well as an amazing selection of cocktails and pastries.
No brunch menu on weekends. But their vegan cinnamon roll is mouthwatering!
Best fried chicken sandwich in town!

"Up Bay Finds" is a series of posts on little known gems found in the Up Bay, a.k.a. the cities of American Canyon, Benicia, Fairfield, Mare Island and Vallejo.
Recipe (makes 8-10 cookies): 1/2 stick of room temperature butter, 1/2 cup of coconut sugar, 2 teaspoons of buttermilk or sour cream, 1 teaspoon of vanilla extract, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 2 cups of GF flour (I used almond flour), 1/2 cup of oats, 3/4 cup of dark chocolate, flakey salt for sprinkling on top.
Instructions:
1. Preheat the oven at 350°F. Cream the butter and sugar together. Add in the egg, vanilla extract, buttermilk or dairy of your choice, salt, baking soda and continue to mix everything together until combined.
2. Add in the almond flour, baking powder and oats and incorporate them in the batter. Drop in the chocolate chunks.
3. Scoop out 8-10 cookies using an ice cream scoop and place the on a baking sheet lined with parchment paper. Make sure to leave lots of space in between them. Sprinkle some flaky salt on top, then pop them in the oven.
4. Bake everything for 12-14 minutes or until golden brown on top. Let them cool off for 5 mins, then serve. Enjoy!

“Immersive Van Gogh” opened in San Francisco on March 16th. After selling out its initial engagement, it extended its stay through September 6th to give more people the chance to walk through famous Van Gogh paintings such as “Irises,” “Sunflowers,” and “Starry Night.”
The exhibit provides an immersive digital art experience with music, color, movement, and light that invites audiences to “step inside” van Gogh’s iconic pieces.
