Ready, Set, Hut with Gorton's

It’s football season and I love having friends and family over to watch the game on Sundays. I always think of appetizers that don’t require much prep time, yet are really tasty. Here my three easy and healthy appetizers with Gorton’s fish sticks and fillets. Enjoy!

Fish and Chips

Ingredients:

1 bag of Gorton's Fish Sticks
1 bag small yellow potatoes
1 bag blended cheese
1 teaspoon of kosher salt
1 teaspoon of black pepper
1 teaspoon of garlic powder
1 teaspoon of onion powder
1/2 cup of sriracha aioli
2 tablespoons of olive oil

Instructions:

Preheat oven to 375ºF. Place the fish sticks in the oven and bake for 20 minutes. While the fish sticks are cooking, cut the potatoes in half and season them with salt, black pepper, olive oil, garlic powder, and onion powder. Bake them on 375ºF for 20 -25 minutes. Remove fish sticks from oven and let cool for 5 minutes. Assemble the fish and chip by scooping some of the potatoes out, then place the fish sticks in the middle. Sprinkle some blended cheese then put them back to the oven for another 5 minutes till the cheese is melted. Serve with sriracha aioli sauce. These are definitely healthier than the classic fish and chips.

Fish On The Log

Ingredients:

1 bag of Gorton's Fish Sticks
2 stalks of celery
1/2 cup of sriracha aioli

Instructions:

Preheat oven to 375ºF. Place the fish sticks in the oven and bake for 20 minutes. While the fish sticks are cooking, cut the celery in 3 inches length. Spread aioli mayo on and place the cooked fish sticks on top. Optional: you can garnish them with cherry tomatoes. These are fun for adults and kids!

Fish Sliders

Ingredients:

1 bag of Gorton’s Crispy Battered Fish Fillets
12 Hawaiian or dinner rolls
1 cup of coleslaw (Get a ready to eat bag at your local grocery store)
1/2 cup of tartar sauce

Instructions:

Preheat oven to 375ºF. Place the fish fillets in the oven and bake for 20-23 minutes. To assemble cut the dinner rolls in half, spread tartar sauce on both sides, add a tablespoon of coleslaw, place the fish fillet on top and serve. They are so good. You can’t have just one!

My New Lunch Spot

If you want to scape from the crowd at Oxbow Market, walk over to CIA at Copia and visit the Food Hall right in the main lobby. Choose from wood-fired pizzas, fresh salads, gourmet cheeses, dim sum, and ramen. You can also purchase seasonal produce grown on the CIA’s Napa Valley farms and gardens. Currently I’m obsessed with their pork ramen. Seriously it’s the best in town! Go try it yourself.

Sun Valley Idaho - Part I

Last week we got back from our amazing trip to Idaho where we spent ten days on beautiful Sun Valley.  Today I am sharing a little about dining and the best huckleberry ice cream in town with you and for anyone who might want to visit at some point.  This was our second year in Sun Valley and it's one of my favorite summer vacation with the kids.  Everyone is still talking about our time there, and we can’t wait to go back again. Olema Campground

Over the weekend we joined the Northern California Airstreamers rally at Olema campground. It was our first rally and camping trip of the season and couldn't pick a better site to start with.

My family and I fell in love with Olema campground. Kids rode their bikes all day long, made new friends, and play ongoing cornhole matches.

Up Bay Finds - Mare Island Brewing Co.

I'm so happy hubby found Mare Island Brewing Co. Another great Up Bay Find! They are located inside of the Ferry Building in Vallejo. Perfect stop for a quick bite before you hop on the ferry, or for a Sunday lunch.  I'm not a big beer drinker, but I tried hubby's beer and it was amazing! Their menu is simple and delicious. For beer lovers, tasting is must.

Here is their best selling item on the menu - the chicken sandwich. My husband said it's the best chicken sandwich he's ever had! And I have to agree with him.
